Double Chocolate No Machine Ice Cream

Double Chocolate No Machine Ice CreamDouble Chocolate No Machine Ice Cream is just the finish for a summer meal.  It is a quick to make, beyond simple recipe that yields a very creamy, chocolate ice cream that requires no ice cream machine to make and soooooooo delicious.

Condensed milk is the base for this ice cream and truth to tell, I could it it all by itself.  Add melted chocolate and whipped cream, freeze a bit and there you have it, chocolate ice cream. No custard mix to cook, no machine to churn.   One of my father’s favorite desserts was chocolate ice cream with Kahlua poured over it.  This Double Chocolate Ice Cream would have pleased him.  It would be great with a bit of rum, orange liqueur, chambord poured over it – you get the idea.  For the little ones, finish with marshmallow creme thinned out with a bit of water and chocolate or hot fudge sauce. Single cookie for The Importance of Base Recipes in BakingThis is a perfect base recipe for cookies as it can be adapted endlessly and can be put together in a matter of minutes.

When baking professionally a base recipe is not only desirable but necessary. It is impossible to have 40 chocolate cake recipes or one for every chocolate cake you ever made. We had about 6 but our work horse was the cake for the Espresso Fudge Cake.

We could combine endless fillings and finishes as well as baking the layers thicker or thinner depending upon what we wanted when we used a base recipe.

I first used this recipe in “My Perfect Chocolate Chip Cookies”. I listed the following points that make this cookie a favorite.

Photos of items for More Baking TipsAdditional Baking Tips are a few more things I have found to enhance your baking.  If you spend enough time doing anything, I think it is inevitable that newer, better or faster ways will be found without sacrificing quality.

Much of the success of my bakery was due to the fact that I was always on the lookout for anything that would make the product faster, easier or better without compromising the integrity. If one of my employees found a better way to do something, I couldn’t be happier.

While these items are in my cupboard, there are others just as good.  I am not particularly endorsing any of them.

Chocolate Chip Cookies for My Perfect Chocolate Chip CookiesMy perfect chocolate chip cookie has a marvelous crunch around the edges when you bite into them followed by a chewy interior which is why this is my perfect chocolate chip cookie.

I am surprised by the number of chocolate chip cookies that proclaim themselves to be “the perfect chocolate chip cookies”. But in reality it is only their perfect cookie. Some people like their chocolate chip cookies crisp, or completely soft or crunchy.

Oatmeal Cookies

Oatmeal CookiesOatmeal cookies have always been my favorite.  It’s something about the spices and texture of this oatmeal cookie.  It’s particularly  difficult to describe.  It’s crispy on the outside with a center that is loaded with the add ins of your choice.  It almost has a lacey quality to it.  I wish I had a nickel for every time someone told me how much they loved this oatmeal cookie.  It is not your usual oatmeal cookie which probably explains the response.  This is a chocolate chip version that is not shy on spices.

I have not included how to pics with this as it is a really basic cookie and I don’t think anyone will have a problem with it.

One thing you will notice is the enormous amount of add ins.  You can use chocolate chips, dried fruit, nuts – whatever you want to make these yours.  I think the large amount of add ins gives this oatmeal cookie its lacy quality since there is just enough dough to hold the add ins together.
