From 1 Recipe Comes Multiple Cake Layers

Many, many years ago when I first opened my bakery, the challenge was finding recipes for cake layers that worked and could be scaled up.  It seemed like all I did was test

Then I discovered, as did everyone, “The Cake Bible” by Rose Levy Beranbaum.  It was a game changer for anyone interested in baking and cakes.  The explanations of what was going on and why in each recipe helped us understand baking better.  At that point in time (1988)  there was not a lot of information on the science of baking which made this book all the more valuable.

I found the recipes in her book for cake layers to be the recipes I was looking for.  Although I used recipes from many sources, including those I came up with, “The Cake Bible” was always my back up. Continue reading

Exceptional Mother’s Day Cakes

Chocolate Strawberry Mousse Cake for Exceptional Mother's Day CakesPresident Woodrow Wilson certainly knew what he was doing in 1914 when he finally got congress to designate the second Sunday every May as Mother’s Day.  A special day set aside to honor mothers certainly calls for desserts worthy of that honor.

I have selected six cakes that can be made in part or completely ahead.  As I am not a proponent of naked cakes, each is easy to finish so you won’t be tied up fussing with frosting it.

A quick note about freezing the cake layers.   Freeze them first, then wrap them completely in foil.  This will keep from smooshing the sides or tops of the tender cakes.

Spirited Marble Cake

Finished PhotoThis Spirited Marble Cake is one of my favorite cakes that dates back to my boys childhood, some forty years ago.  I’ve updated the cake to eliminate the need to beat the egg whites separately and fold them in.  Marble cakes for some reason have gone by the wayside in recent years, but I love the way they look and the bite of chocolate and white cake together.

This is considered to be two step cake and I love the ease of putting it together.  I remember the creme de cocoa being a rather racy ingredient at the time. Continue reading
