Chocolate Raspberry Marzipan GateauThis Chocolate Raspberry Marzipan Gateau is a prime example of French baking. I can’t remember where this comes from, certainly I did not come up with it. The three hole paper is turning yellow with age so it has to be when I was learning and becoming interested in pastry as a profession.

A note on the bottom says, “This is a wonderfully moist and flavorful combination.” I love finding little notes on old recipes. Continue reading

Easily Made Raspberry Ripple Coffeecake

Raspberry Ripple CoffeecakeThis Raspberry Ripple Coffeecake has always had a special place in my baking repertoire. A rich,   quick to make treat for breakfast or snacking, this has a crumb topping. Eaten warm or room temperature, coffeecakes are always a treat.

While this cake highlights raspberry, any favorite flavor jam can be substituted. This Raspberry Ripple Coffeecake is usually made in a 9 inch round pan, but I decided to alter the sizes to make a smaller cake and also feature regular and large Texas size cupcake pans for individual treats.

The cream cheese in the batter makes a particularly moist coffeecake that keeps well. Continue reading

Chocolate Raspberry Pop Tarts

Chocolate Raspberry Pop TartsA friend of mine, Danielle Luisi the pastry chef at Annie Gunn’s, came up with this version of a pop tarts, but with different fillings. I can’t thank her enough because they are easy and a very upscale version of this popular treat. Imagine a thick filling of chocolate and raspberrry sandwiched between two pieces of flaky buttery pastry.

My pop tarts starts with a pate brisee, the French butter pastry. Made in the food processor it takes minutes. Chilling is the secret to this pastry because of the high butter content. Anytime it starts feeling a bit soft, line a baking sheet with parchment and pop it the fridge or freezer for a few minutes. Other than softening, it is a dream to work with.  This recipe also features a method to make shaping easier.

However substituting a regular pie pastry will due nicely here also. Continue reading

Flourless Chocolate Raspberry Cookies

Finished photoThe original recipe for these really chewy, rich flourless chocolate cookies comes from King Arthur Flour but of course I had to put in my 2 cents worth. This gluten free, almost fat free cookie goes together quickly with a whisk and a bowl or a hand mixer and bakes up in minutes. While it is good by itself, it is better if you sandwich them together with raspberry jam and sprinkle them with powdered sugar. These Flourless Chocolate Raspberry Cookies are amazingly fudgy and moist and have quickly become a favorite. Continue reading
