Chocolate Truffles for Holiday Food GiftsFood gifts are always welcome, but even more so during the holiday season.  Every year the holidays arrive faster and faster.  No matter how I try, there is no way to slow them down.  When I was a little girl, time could not go by fast enough.  Now that I am no longer a little girl, it goes all too fast.

Many of us, including me, have people on our gift list that we want to remember. There is no better way to let someone know you appreciate them or what they do than with food gifts you make.  So I drew together a list of quick to make and wonderful to receive gifts that are not cookies.  Don’t get me wrong, I love making and giving cookies, but they can be time-consuming if you work or are just busy. Cheddar Pecan Shortbreads

Zippy Cheddar Pecan ShortbreadsWhile shortbreads are usually thought of as sweet, these Cheddar Pecan Shortbreads are definitely on the savory, snacky side. Anything with cheddar cheese, pecans and cayenne pepper is definitely on my must try list. But I must warn you, these are absolutely, positively addictive. There is not way to eat just one – hence the large number it makes!

When I had my take out shop, we sold these Cheddar Pecan Shortbreads and they were always a winner with wine, beer, lemonade or nothing at all.

They are perfect for the holidays as they can be kept in an airtight tin for weeks and in the freezer, unbaked for months. One thing to mention is that they will seem a lot zippier if eaten when just baked. They should be made and stored in a tin for at least a few days to mellow them out – even better for the busy times. Continue reading

Tropical Shortbread Cookies

Finished photoThese delightful, thin, chocolate coated Tropical Shortbread cookies are of the European variety and couldn’t be easier to make.  The method of putting them together is a bit unconvential and the ingredients, or lack of them, is interesting.  The cookie uses no egg, depending instead on butter to hold them together – a true shortbread cookie.  Powdered sugar is used as opposed to granulated and not much of that.  European cookies are generally, much less sweet than their American cousins which lets the flavors really come through.  These particular cookies are actually best eaten the day or days after baking and coating.
