Pastry Cream

unsalted butter, softened (225 grams or 8 ounces)

Instructions
Place the pastry in a mixing bowl. With the whisk attachment, beat until smooth.
Add the butter about 2 tablespoons at a time. Add additional flavoring if using and beat until light.
Yield: 800 grams or 1 ¾ pounds or 4 cups
