With 25 years experience owning and operating a wholesale specialty bakery servicing hotels, restaurants and caterers, I am going to share a wealth of information I’ve gained over those years with you. You are going to certainly find recipes, but just as important, the ins and outs of baking, why things happen - or don’t, (sometimes even worse), techniques and equipment. Everything to help you become the baker or pastry expert you always wanted to be.
The goal of this blog is to share not only recipes but the tips and tricks we used in my wholesale bakery of 23 years selling to hotels, restaurants, and caterers. Many of the recipes come directly from the bakery. Others just strike my fancy or are updated in some way. There will be white papers on ingredients, equipment, why things work the way they do and anything and everything about baking.
In addition to the recipes, tips and tricks, I will also be posting about the workings of a professional bakery.
