    Bake Once, Breakfast All Week: My Best Freezer-Friendly Muffins

    After more than 25 years of owning a professional bakery, I can tell you with complete confidence that truly spectacular muffins don't require fancy equipment or complicated techniques. A bowl, a whisk, and a few measuring utensils — that's really all it takes.

    Crunchy Topped Apple Muffins

    What I love most about a great muffin, though, is how beautifully it freezes. Weekday mornings can be chaotic, and having a stash of bakery-style muffins at the ready is an absolute lifesaver. I always recommend baking a double batch on the weekend. Once they cool completely, freeze them hard then wrap them well and pop them in the freezer. A quick warm-up in the oven and you've got a warm, tender muffin that tastes like it just came out of the pan.

    Whether you're after something bursting with fresh fruit, swirled with jam, loaded with chocolate, or crowned with a crunchy streusel, there is something here for every craving imaginable. These are the muffins I make again and again in my own kitchen — and once you try them, I think you'll understand why.

    If you're looking for soft, tender cinnamon muffins that taste like they came straight from a bakery case, there's no need to look any further.     Blueberry Crumb Muffins

    Topped with a Brown Sugar Almond Crumb, these are easily one of the best muffins you'll ever make — and one of the easiest. I prefer wild blueberries here, and because they're mostly sold frozen, they go straight from the bag into the batter and into the freezer after baking without missing a beat. Pull one out on a busy Tuesday and it's like having a little slice of summer for breakfast.

    Double Chocolate Truffled Muffins

    This is my riff on the Olympic chocolate muffin that took Paris by storm, and it is deeply chocolatey with a truffle center that is nothing short of spectacular. No mixer is needed and it comes together in literally minutes, making a big freezer batch entirely realistic. Warm one up on a weekday morning when you need a little extra motivation to get going.

    Lots of apples and a really crunchy sugar topping make this one of the best muffins around — and what makes it even more attractive is that the topping remains just as crisp and crunchy after freezing as when it came from the oven. That crunchy sugar topping alone is worth the entire muffin. I always keep a stash of these in the freezer for exactly that reason.

    Fresh strawberries are used two ways here — pureed into the batter to intensify the flavor and folded in as chunks for a burst of sweet-tart goodness. A full pound of this summertime fruit goes into each batch, so be sure to pick the ripest ones you can find. They freeze beautifully, locking in that vibrant flavor so you can enjoy a taste of summer even in the dead of winter.

    Really Easy Pumpkin Muffins

Use a thick jam so it stays put in the heat of the oven, and it will hold up just as well in the freezer. Simple pantry ingredients, no mixer, and a result that is hard to beat on a busy weekday morning.

    Cranberry Muffins Recipe

    Quick to make and celebrating the season with their vibrant color and tart taste, these are an absolute staple in my kitchen. I use frozen cranberries to keep them in large pieces and prevent the batter from going gray — which also makes them ideal candidates for the freezer. Grab one on a busy morning and breakfast is handled.
