Rocky Road Snack CakeAs a committed chocoholic, this Rocky Road Snack Cake fills the bill. I noticed recently that I haven’t posted a chocolate recipe for a while and being short on time came up with this really fast snack cake.

Snack cakes need to be quick, good and so easy to make.  This Rocky Road Snack Cake fills all those requirements.  Half of the cocoa version of the high ratio cake is the base for this one.  A deep chocolate ganache moors the mini marshmallows and peanuts to the cake.  While any nut can be used, I just like the peanuts with this. They can be left whole or lightly cut in the processor.

Rocky road Snack Cake is perfect with a tall glass of cold milk. So if you’re in a hurry and need a chocolate fix, this is the cake for you. Continue reading

Greek Orange Yogurt Cake with Orange Syrup (Portokalopita)

Greek Orange Yogurt CakeGreek Orange Yogurt Cake or Portokalopita as it is known in Greece first came to my attention when reading a post by David Lebovitz writing about Tinos Greece.

Of course, I immediately started searching for the dessert and came up with what I thought to be the most authentic version of this Greek Orange Yogurt Cake based on the fact it was from Greece and its use of phyllo and a soaking syrup.  Many Greek desserts are finished with a soaking syrup that often contains cinnamon sticks and cloves.

The photograph of this cake, so moist you can almost taste it, made it a must try.  My love of phyllo is best expressed in my post on Baklava as my mother made it.  Watching my mother and grandmother make this thinnest of doughs has fascinated me all my life – and still does. Continue reading

Easily Made Raspberry Ripple Coffeecake

Raspberry Ripple CoffeecakeThis Raspberry Ripple Coffeecake has always had a special place in my baking repertoire. A rich,   quick to make treat for breakfast or snacking, this has a crumb topping. Eaten warm or room temperature, coffeecakes are always a treat.

While this cake highlights raspberry, any favorite flavor jam can be substituted. This Raspberry Ripple Coffeecake is usually made in a 9 inch round pan, but I decided to alter the sizes to make a smaller cake and also feature regular and large Texas size cupcake pans for individual treats.

The cream cheese in the batter makes a particularly moist coffeecake that keeps well. Continue reading
