Rocky Road Snack Cake

Rocky Road Snack CakeAs a committed chocoholic, this Rocky Road Snack Cake fills the bill. I noticed recently that I haven’t posted a chocolate recipe for a while and being short on time came up with this really fast snack cake.

Snack cakes need to be quick, good and so easy to make.  This Rocky Road Snack Cake fills all those requirements.  Half of the cocoa version of the high ratio cake is the base for this one.  A deep chocolate ganache moors the mini marshmallows and peanuts to the cake.  While any nut can be used, I just like the peanuts with this. They can be left whole or lightly cut in the processor.

Rocky road Snack Cake is perfect with a tall glass of cold milk. So if you’re in a hurry and need a chocolate fix, this is the cake for you. Continue reading

S’Mores Bars

S'mores BarsS’Mores Bars are a cousin of the beloved S’mores summer time treat made over a campfire.   But some of us can’t wait for campfire weather so here is a version of the beloved S’mores that can be served as a S’Mores Bar cookie anytime the craving hits. Really easy, fast and delicious.

The individual S’Mores Bars can be warmed for about 10 seconds in a microwave to soften the chocolate if desired.

Graham cracker crumbs can be used as bought or graham crackers can be broken up and added to a processor to make crumb out to them.  Alternately, put them in a plastic bag and crush them with a rolling pin.  Just be sure they are uniformly fine. Continue reading

Marshmallow Fondant

Fondant wrapped for Marshmallow FondantNext week’s blog is the French Christmas extravaganza,  Buche de Noel.  At the bakery we always had fondant, pastailliage and almond paste around so making the holly berries was easy. We just tinted one of the items red and rolled little balls.

When it came time to figure something out for the holly berries for the Buche de Noel, I wanted to give you the option of making something as I think the berries add so much to the Buche.

As I researched different things, I thought the marshmallow fondant was the easiest and best for this small item. It could be scaled down to make a small amount and it could be tinted for the berries. However, all the recipes I could find on line required actual marshmallows heated with a bit of water. Then it would be turned out onto a work surface. Powdered sugar would be plopped on top and with greased hands the mixture would be kneaded, adding more sugar as necessary to obtain a workable fondant. Almost all the recipes made reference to the amount of kneading that went into it. When I looked at many of the tutorials, I knew I definitely didn’t want to do this. Continue reading

No Bake Rocky Road CheesecakeToday was KMOV TV Great Day St. Louis day and here’s the recipe for this easy to make no bake cheesecake.

Ummmm cheesecake – everyone’s favorite. But getting it to come out is another matter. Do you use a water bath or not? How do you prevent it from cracking? Or do you just give up and buy one? What if you could make a great cheesecake and not have to worry about the baking part? We’re not talking about just any cheesecake, but rocky road with chocolate, salted peanuts and marshmallows finished with a gravel top of peanuts and chocolate and caramel sauce? Now there’s no reason not to make one. Oh, and you can tell everyone you baked this perfect cheesecake and soak in all the compliments. No one will know this was a no bake cheesecake except you and me!! And I’m not tellin’!! Continue reading
