    Macadamia Golden Syrup Tart

    Macadamia Golden Syurp TartThis Macadamia Golden Syrup Tart comes to us from Australia and contains two of my favorite ingredients โ€“ macadamia nuts and golden syrup.  I fell in love with macadamia nuts when a neighbor would bring them back from Hawaii in various forms.

    And then Iโ€™ve mentioned before that I could eat the Lyle's Golden Syrup straight out of the bottle with a spoon.  Itโ€™s that amazing.  It can be easily found online and brings a taste that substitutes simply canโ€™t.  However, if you have to substitute I have seen clear corn syrup used.Lyle's Golden Syrup

    The original recipe as written for Australian bakers used gram measurements โ€“ also my favorite. However, they donโ€™t translate well to volume measurements which is why you will find some rather strange numbers.

    The only other thing I changed was how the Macadamia Golden Syrup Tart was put together.  I used the food processor to make this easy and pressed in the crust instead of rolling it out.

    Brown Sugar and Oat Pastry Crust

    1 cup +1 tablespoon all purpose flour (150 grams or 5 โ…“ ounces)
    ยผ cup packed brown sugar (50 grams or 1 ยพ ounces)
    ยฝ cup unsalted butter, cold and cut into small pieces (114 grams or 4 ounces)
    โ…“ cup oatmeal (30 grams or 1 ounce)*
    1 egg yolk
    1 tablespoon cold water

    *I used old fashioned oats as opposed to quick oats.

    Preheat the oven to 400ยฐF. Spray the center only of a 9x1 inch tart pan with a removable bottom.  Set aside.

    Place the flour and brown sugar in the bowl of a food processor and pulse several times to mix.Flour in and sugar in processor bowl

    Add the butter to the processor.

    Process until indistinguishable.Butter processed.

    Add the oatmeal, egg yolk,and  water.Oatmeal and yolk added for the crust. Process until a ball forms.Pastry forming a ball

    Remove the dough and weigh  2 โ€“ 100 grams (3 ยฝ ounce ) pieces.  The remaining piece will weigh about 175 grams (6 โ…› ounces).  If youโ€™re not using a scale, divide the dough in half with one half being slightly larger.  Set that aside for the bottom.  Divide the remaining piece in half.

    Roll the 2 smaller pieces into ropes and place them along the sides of the tart pan, overlapping the edges.  Press them in.

    Place the remaining piece in the bottom and press it evenly across the bottom and join it well with the sides.

    Spray a piece of foil (do not use parchment, it isnโ€™t strong enough) and place it, sprayed side down, into the tart.  Make sure the foil is pressed into the edges.Crusted line with foil

    Fill with weights up to the top.  I use beans Iโ€™ve had for a long time because they are heavy.Beans filling crust

    Iโ€™ve seen rice used but I donโ€™t think it is heavy enough.  Also, they sell pie weights โ€“ just make sure there are enough to go to the top of the pan.

    Bake for 10 minutes.  Remove the weights*.  Bake 10 minutes more.  The shell will be lightly browned.  Cool.  REDUCE THE OVEN TO 350ยฐF.

    *Carefully remove the weights by bringing the four corners of the foil to the center and lifting it out.  If using beans, cool them completely before putting them back in the storage container.Baked Crust

    Macadamia Golden Syrup Tart Filling

    5 ounces macadamia nuts (140 grams)
    ยฝ cup unsalted butter, softened (114 grams or 4 ounces)
    ยฝ cup golden syrup
    2 eggs
    ยผ cup all purpose flour (35 grams or 1 ยผ ounces)
    ยฝ cup +1 tablespoon unsweetened coconut (20 grams or ยพ ounce)
    1 to 2 tablespoons oatmeal for topping

    If the nuts are not toasted place them, in a single layer, on a rimmed sheet tray.  Bake for 7 to 10 minutes depending upon the size of the nuts, stirring once or twice.  They should be golden and fragrant when done.  Cool before continuing.

    Without cleaning the processor, add the nuts and pulse to chop.  Do not chop too fine.  Remove from the processor.Chopped macadamia nuts

    Place the butter, golden syrup, eggs, and flour in the processor bowl.  Process until smooth. Ingredient mixed. If it appears curdled at any point, just process it longer.  It will come together.

    Add the nuts and coconut and pulse 3 or 4 times to distribute.Completed filling

    Pour into the baked shell.  Sprinkle with oats.

    Place on a parchment lined baking sheet and bake for 25 to 30 minutes until it is set.  Tent with foil if it is browning too quickly.Baked Macadamia Golden Syrup Tart

    Cool and serve it plain, or as they do Down Under with vanilla ice cream drizzled with golden syrup.

      Lyle's Golden Syrup is an English thing, too, as a house guest of ours came over a couple of years ago with 9 bottles of Golden Syrup for me, knowing I was a baker. I struggled to find recipes to use it until the Love Bars one came out, and now this. I'm looking forward to it, as my copy of your European Tarts cookbook falls open naturally to the Mocha Glazed Macadamia Caramel Tart. It is my go-to impress-the-guests dessert.

      As an Australian home cook, I spend so much time translating silly US measurement (I cup plus a spoonful!!) to metric. It would be wonderful if the US would catch up with the rest of the world! We grew up on golden syrup - it's wonderful on toast!

        Hi Melissa, The measurement is a direct translation from the 150 grams called for in the original Australian recipe. I simply forgot to put in the weight measurement which has since been corrected. But as you no doubt noticed, the other ingredients are in volume, grams and ounces which is how I alway post. I think golden syrup is good on anything!!

      We're not fans of coconut...... Would you have any suggestions on what could be substituted instead of coconut?

      I love your recipes and I will be making this next weekend for company. the crust sounds like it would be great for a lot of different tarts.
      I have not seen Golden Syrup near me so I looked this up.
      Home made Golden Syrup
      3 Tb water
      1/2 Cup sugar
      1 1/4 Cup boiling water
      2 1/2 Cups sugar
      1 lemon slice
      In a heavy sauce pan add the 3 Tb water and the 1/2 Cup sugar.
      Over medium heat cook until sugar has reached a caramel color.
      Carefully add the boiling water
      Add the 2 1/2 Cups of sugar and bring to a simmer
      Add the lemon slice
      Simmer for 45 minutes, uncovered.
      Remove the lemon slice
      Pour syrup into sterilized jar.
      Store in a cool dark place

      Now all I have to do is make syrup and buy Macadamia nuts..about 2 times the amount called for since I love to nibble on them....

        Hi Nikki, I've seen this recipe and don't recommend it for a number of reasons. First, it won't taste the same or possibly have the same viscosity. More importantly, the directions don't include one of the basics of sugar syrups which is to wash down the sides of the pan to remove any sugar granules. If you don't, the entire batch will granulate and be ruined. Also, if you go to Amazon and put in Tate and Lyle's Golden Syrup you can get 6 bottles for $19.95 which comes out to $3.33 a bottle. There are many ways you can buy it.

        In case anyone wonders, I don't get paid to recommend products. I do it because I believe in them.

          thank you for the warning. I will order the syrup. (I trust your judgement on this) and I should have it in plenty of time. I might have to buy more nuts though!

            Your welcome Nikki. Many years ago, I burned myself badly making a sugar syrup. It was before I knew what I was doing and I've never forgotten the pain. Nothing like it. I would feel terrible if one of my readers did the same thing. I agree about the nuts, especially toasted. Try my Sweet and Hot Macadamia Brittle for a real treat.
