This is a hard time for many of us.  A naturally gregarious people have been sequestered and cut off from each other.  It’s hard.  But it needn’t be depressing.

Almost everyone I know seems to be cleaning in these early days.  I’m not sure what that says about my friends but be that as it may, it’s not a bad idea.  I’m doing some of that too.  I have two pieces of furniture I have been trying to treat with Liquid Gold forever and this just might be my chance. Sky High Salted Caramel Chocolate PieThis Sky High Salted Caramel Chocolate  Pie is a make-ahead, no-bake chocolate pie that came to me while I was making the special dessert for Valentine’s Day this year at the restaurant.  It’s super easy with intensely deep, layered flavors of coffee and brandy which enhance the chocolate.  It can be frozen in part or as a finished dessert.  The really neat thing about this pie is that, when cut, it forms its own sauce as the salted caramel layer slowly oozes out to form a puddle around the base.   Continue reading

Viennese Chocolate PunchtorteThis Viennese Chocolate Punchtorte is one of the most amazing cakes you will ever make.  I’ve updated it slightly from my first book, “The New Pastry Cook”. Having baked for so many years there are few desserts I deem extraordinary.  This is definitely one of them.

I love Viennese baking as they seem to have a love affair with their desserts. While they are known for their Sachertorte, I truly believe it can’t hold a candle to this Viennese Chocolate Punchtorte. Continue reading

Chocolate Coconut Cream CakeThis tall, elegant, Chocolate Coconut Cream Cake is perfect for a change-up Easter cake.    I have always wondered why coconut is associated with Easter.  My search yielded no help.  But it is and this Chocolate Coconut Cream Cake is a surprise twist on my traditional Coconut Cream Cake.  Changing the cake layer from white chiffon to chocolate chiffon completely changes the cake.
