    15 Things Good Bakers Do Differently

    When I had my bakery, consistency was not optional. Cake layers had to be flat, crusts had to release cleanly and ingredients had to be measured correctly every time. Over the years, we found ways to make that happen without adding needless steps or relying on gadgets that took up space and did little else. Many of these techniques came from solving a problem in the bakery, where wasting a cake, a crust or a batch of dough was simply not an option.

    These are the baking tips and baking techniques I still rely on and share with home bakers because they work. Some are basic, such as using the tare/zero feature on a scale. Others, like spooning a crust before releasing it from the pan, may be new to you. There is also a quicker way to chop nuts and a much better way to roll cut out cookies. None of them are difficult. But each one can make your baking more accurate, less frustrating and, most importantly, give you a better finished product. They work well for seasoned bakers as well as for beginners including baking basics, how to avoid baking mistakes and baking troubleshooting.

    This is a small bakery technique that can save a cheesecake, lemon bar or other filled crust from a messy release. A filling can seep into the gap between the crust and pan, making it difficult to remove cleanly. Spooning the crust before or after baking or both solves that problem simply and effectively as it seals the crust to the side of the pan.
